 4 Oyster MushroomWashed. Up to 6 mushrooms
 1 Small ShallotThinly sliced
 4 Fresh Sage Up to 6 leaves
 Salt & PepperPinch of sale & pepper.
 2 tbsp Olive Oil
 ParmeshanFew shaved pieces

In a frying pan on medium heat add olive oil sauté shallots until golden brown.

Add 2 cubes of butter, salt and pepper then mushrooms, reduced heat and cook until mushrooms are caramelized.

Add a cube of butter and white win or stock, season to your liking.

Finish with shaved Parmesan and fresh sage
